The Kiss and Fly Fortune Cookie is a traditional Chinese cookie with the French touch, shaped like a crepe folded over a personal message.
To make the Fortune Cookie, the crispy crepe batter must be unfolded and then folded back on itself with its message inside.
This four-companies project, led by HOPI CONSULTING, KISS and FLY, LA CIGALE DOREE, and Chaudelec Systèmes Industriels (CSI), resulted in a production line with its batter softening oven.
The CSI infrared tunnel heats the crepes to 100°C regardless of the crepe inlet temperature. Chaudelec Systèmes Industriels designed a mixed electric infrared oven. The medium wave infrared in the upper part softens the batter, while the more responsive and powerful short wave infrared in the lower part adjusts the outlet temperature based on the inlet temperature.
This small industrial line reflects CSI's expertise, both in its sharing with other industrial partners and its ability to invent new applications for infrared in the food industry. This line is also used to make ice cream tulips.
