Gas infrared ovens used for browning or gratinating meats, vegetables, or prepared dishes are often used without any real production downtime, except for cleaning. Installed in cold and often very humid environments, they are subjected to heavy use and rarely available for maintenance. Furthermore, many gas infrared ovens are simply poorly designed or manufactured without a proper understanding of infrared technology. All these factors lead to a significant number of browning ovens that are poorly insulated or highly sensitive to cleaning. The result is frequent replacement of the infrared elements and significant production losses.
